Another Great Idea..Using Spinach Greens

Stuffed Tilapia Florentine for Two
So, for those who have already experienced the amazing fresh greens from my neighbor's garden, I will be writing up some easy recipe ideas.This wasn't the first one I came up with- but hey, you know the time kind of thing...

Tilapia was on sale and it is really a very mild nice fish that's easy to cook. I stuffed it up with some leftover ricotta cheese and a little bag of fresh spinach greens, added some sprinkling of mixed cheese and baked it into a buttery cheesy casserole type dish you'll gonna love!!

2 whole fillets of mild white fish (Flounder, Cod or Tilapia )
1-2 tbls. butter spread or olive oil
2 cups of fresh or frozen spinach or any type of greens.
1/4 to 1/2 cup drained cottage or ricotta cheese ( excess liquid strained out.)
4 oz. mixed cheeses or chedder


Dry fillets off thoroughly. Spread with butter or olive oil, season with salt and pepper.
Place in small casserole dish.
In small pan gently cook greens in olive oil just until wilted.
Drain any excess liquid from greens completely.
Mix in the cottage cheese with the greens.
Lay on top of fillets and top with another fillet if you wish or just top with cheese.
Bake at 350 for about 15 minutes until cheese is bubbly and fish is flaky.

Now that I think about it, this dish could probably be good using thin chicken or even turkey fillets that have been marinated in buttermilk ( for tenderizng purposes).

Cheap & Easy Entertaining

I love to entertain, but my budget always forces me to think outside the box. These are some recipes for some parties I have given that really went over pretty good. They were not only in-expensive to prepare, but they gave me plenty of time to just chill and have fun the day or evening of the party. I hope you will enjoy them also.

Tip: I used whatever I had in the freezer and pantry to make these dishes.

Menu:
Fried Pekora
Use some frozen mixed veggies, sliced onion rings, frozen Broccoli, pkgd cabbage slaw or what ever crisp veggies you have..
Season 2 cups or so of flour with dash of: Cumin, salt, pepper, curry, Garam Marsala powder (India Spice section)
Add enough soda water or just plain water to thicken like a pancake batter. Coat dampened  veggies with flour so that batter will stick, dip veggies in batter and fry until golden. Serve with Mango Chutney.

Mango & Pineapple Chutney
Use a tsp of red pepper flakes,1 can drained pineapple, chopped medium onion, minced clove garlic, chopped red bell pepper, Sauteed together in olive oil starting with pepper flakes, until all are tender, add a jar mango jelly and simmer.

Baked Pita Chips w/Hummus Dip
Use 1 can of drained garbanzo beans, 2 cloves of garlic, plenty of olive oil and some Tahini paste or sesame oil, a dash of salt and pepper. Blend until creamy and tasty. Serve with warm baked pita shells that have been cut in quarters and brushed with olive oil. Bake shells until crisp golden at 350.

Babba Ganoosh w Fresh Pita
One or two large eggplants pricked & baked until thoroughly cooked tender. (450 Degrees - 45-60 min.) Scrape out pulp and blend with 1-2 cloves garlic, salt, lemon juice, Tahini Paste or sesame oil until creamy and tasty. Serve with pita bread and top with a swirl a warm olive oil. Eggplant version of Hummus dip.

Tip: Always buy chicken & wine on sale, Bogo or Bulk Cheese in the meat & cheese Isle NOT the deli Isle & don't try to make your own pastry.

Menu:

Chicken Coq Co Vin- Stewed chicken with wine and herbs

Quiche Lorraine- Guyere or favorite Cheeses Bacon, onion & Pastry

Salad Nicoise- Bed of Salad Greens, Layered in corner sections with deviled eggs, Black  olives, seasoned small new potatoes, green beans & white canned tuna. (Choices optional )

Chocolate Truffles -from the joyofbaking

Guests bring their favorite wine...


Afternoon Tea Party

Tip:To save money on table ware, I made this totally finger food style and cooked up two chickens in the oven that were BOGO.
