This actually is a take off from a three ingredient recipe, but with a dash of baking soda and a touch of flour, it really has a better melt in your mouth texture. They are a bit on the soft, crumbly side, so you need to bake them at least 10-12 min. you may need to experiment here, as you really do not want to over cook these. I first used a whole cup of sugar , but they were a bit too sweet for my liking. All in all though, I thought they were delicious.
* 2/3 cup sugar ( Substitute half white and 1/4 cup brown sugar if desired)
* 1 Tsp. baking soda
* 1 pinch Salt
* 1 Tbls. flour.
* 1 egg
* 1 cup peanut butter
Mix sugar with soda & salt & flour. Add egg & blend. Add Peanut butter mix well. Drop on greased cookie sheet or parchment paper in round balls press with slightly floured or moistened fork in criss cross pattern. Bake 10-12 minutes or 8 minutes and turn off oven and let cook for 5 more minutes at 350. Don't over cook.
