This is a great way to fix a very tasty soup by just using whatever you happen to have in the way of frozen veggies. I used a small leftover bag of peas, string beans and a frozen mix blend of okra, lima beans, onions and carrots. Imagine my surprise when even my meat eating husband and son devoured it.
*1/2 cup frozen peas
*1/2 cup french style frozen green beans
*1/4 cup of frozen vegetable blend
*1 yellow potato diced
*1 med tomato diced
*1 small onion diced
*1 garlic clove diced
*3-4 cups low fat reduced sodium chicken broth
*Sprinkle instant garlic
*Italian blend shredded cheese
Sautee up garlic and diced onions in a tblsp. of olive oil. Add potatos cook for just a few minutes. Add the spices to the pot and cook just to bring out the flavors then add the vegetables. Pour in the Broth and simmer for 30 minutes. Salt and pepper to taste. Serve with grated cheese. Serves 4. Update: Our next batch was made with fresh musrooms, mixed veggies, rice, & beef broth, Delicious!
