Tillapia with Yogurt Mustard Sauce

Not only is this delicious and very refreshing, but healthy also! I simply drizzled abit of extra virgin Olive oil on three fresh fillets of tillapia, sprinkled with a bit of sea salt and pepper and cooked gently ( med -low heat) in a saute pan with a splash of Olive oil & a tblsp. of Smart Balance Butter substitute. Cooked on both sides until nice and crisp, the fish was then topped with the fresh, slightly tart sauce below:

*1 cup greek yougurt
* 1-2 tablespoon of honey
* 1 to 1  1/2 Tsp. Dijon Mustard or Ground mustard with a splash of white wine
* Splash or two of lemon juice
*Dash of Black pepper
* Chopped fresh chives
Just mix the sauce together and add honey, lemon and ground mustard to your liking. Serve this over the fish with some more fresh chopped chives for color. Add some wild rice blend or sweet Yams and green beans and you've got a great healthy meal thats also very budget friendly!
