Money Saving Menu Ideas

I am currently on an all time high. This week I actually made six tasty healthy meals for only $36.00 and no, we did not eat hot dogs or macaroni and cheese. So how did I do it? Well, here's my secret: I planned. Granted, it took a bit of time, and the meals were made using whatever I had left in the cupboards and fridge and I used only meats that were on sale. The result? Very Tasty, almost gourmet type meals so easy and so quick that I just had to share them. So here is the menu at least to help to get you inspired, I will be posting the recipes as soon as I can...

I purchased a 6 1/2 lb chicken  on sale for .99 a lb and included a free seasoning packet of herbs, and the bacon was a buy one get one free leftover package from last week. So only the tomatos, Beef and Beans and a few other items had to be purchased. I simply covered the bird in a mixture of the herbs & olive oil and after sprinkling the inside with a little black crackcd pepper & sea salt, I stuffed it full with baby portabellas. The resulting juices were skimmed of fat while the cooked bird rested ( 375 @ 2 1/2 hours) and 1/2 cup of wine was added to the simmering broth. Served with the small roasted potatoes, that were covered in my favorite seasonings of olive oil, garlic & italian dried spices and cooked in the last 45 minutes during the roasted chicken, they were fantastic with the mushroom wine sauce. I had so much meat leftover I was able to use the rest in my mexican burritos...a real two for one special! Now What can my savings goal be for next week?....
