Savings tip: Buy a large whole chicken and cut it up into pieces, marinate 1 hour or more with mango juice or Dales low sodium steak seasoning and garlic powder, olive oil, black pepper.Grill or bake 45 min. Save any chicken left overs for the penne pasta meal. 4 servings.
Chicken Penne Pasta w/Olives
Saute up some diced garlic & 1/2 can black olives in olive oil, add any leftover diced chicken, 2- 8 oz. cans of crushed tomatoes, garlic powder, cayeen powder if you like it a bit spicy, dash of sea salt, dash of dried basil or use diced fresh basil and simmer. Boil up 1/2 box of Penne Pasta for 8-9 min.drain and add to the sauce. Serve with fresh grated parmesan.
Our Favorite Black Beans Recipe:
Saute some bacon or ham pieces, add a bit of diced onion and garlic in the fat & cook till tender. Drain fat and add large can of rinsed & drained Goya Black Beans. Add small can of reduced sodium chicken broth , a dash of hot sauce or some salsa if you prefer, cumin, cayeene powder, garlic powder and simmer for 30 min.
